But What is Amba Sauce & Where Does it Come From?

Especially popular in Saudi Arabia and Iraq, Amba is a pickled mango condiment from the Middle East. Amba sauce is usually served on an appetizer platter with bread, cheese, eggs, and other meats in Saudi Arabian cuisine.

Ingredients Needed:

For the Marinade

  • Greek yogurt – 4 Tbsp
  • Teta Foods Amba Sauce – 2 Tbsp
  • 1 chicken or 4 chicken portions

For the Pilaf

    • Basmati rice or Brown rice – 1 Cup
    • Onion – 1 medium, finely chopped
    • Curry powder – ½  tbsp
    • Carrot – 1, finely chopped
    • Celery – 1 stick, finely chopped
    • Roasted chicken – 1 portion, shredded or cubed
    • Peas or any other frozen veg
    • Vegetable stock – 1 pint
    • Orange – half, juice and zest 
    • Olive oil and seasoning

Preparation/Method

  • Combine the Greek yogurt and Teta Foods Amba sauce into a marinade and rub it all over the chicken. Roast it slowly until golden and succulent. Shred it for the pilaf.
  • In a heavy pan, heat some butter and olive oil. Saute the onions, carrots and celery until soft. 
  • Add the curry powder and saute for another five minutes or so.
  • Add the chicken followed by the rice and stir comfortably.
  • Add the vegetable stock and cover the pot. Simmer gently for about 20 minutes or until the pot is dry and rice is fluffy.
  • Add the peas, orange juice and grated zest at the end and stir lightly.
  • Pro tip – Serve with a little extra dollop of Teta Foods amba sauce and some Greek yogurt.
