But What is Falafel & Where Does it Come From?

Herbs, spices, and ground chickpeas or fava beans are used to make traditional falafel. The mixture is then shaped into patties or balls and deep-fried to produce a texture akin to a fritter—crisp on the outside and soft on the inside.

This traditional Middle Eastern & Mediterranean dish is great for eating on the go and is frequently served with mezze, a collection of mini-meals.

Ingredients Needed:

  • Dried chickpeas, soaked overnight (yields two cups) – 1 cup
  • Red onion – ½, chopped
  • Garlic cloves – 3-5, chopped
  • Parsley (half bunch) – ¾ cup, chopped
  • Salt – 2 ½ Tbsp
  • Cumin Powder – 1 Tbsp
  • Ground Coriander, Black Pepper Powder – 1 tsp
  • Cayenne Powder – ¼ tsp
  • Baking soda – ⅛ tsp
  • Vegetable oil – 6 cups (fill the pot ¾ full)

  • Pita Bread/ Loaf
  • Tomato – ½ cup
  • Radish – ½ cup

Preparation/Method

  • Soak your dried chickpeas. Overnight or for at least 8 to 12 hours. Remember the chickpeas will triple in size, so cover them with plenty of water. Then drain and rinse them properly.
  • Add the chickpeas, chopped garlic and onion, parsley, baking soda, spice blend, and salt to a food processor.
  • Pulse the food processor but do not blend completely. The final mixture should resemble coarse sand.
  • Transfer the mixture to a bowl, stir it together until it’s fully combined and cover with plastic wrap or a lid. Place the bowl in the fridge. Chill the falafel mixture for 30 minutes to 1 – 2 hours.
  • Form the falafel mixture into balls by hand or with a cookie scoop to about the size of a large marble, firmly packed, and put aside.
  • Fry the falafel: Fill a deep pan halfway with vegetable oil, then place it over medium heat.
  • Make sure the saucepan isn’t packed, too full of falafel before dropping the falafel balls into the boiling oil one at a time.
  • Cook for one to two minutes, or until the falafel is golden brown and most of the bubbles have vanished.
  • Place the pita piece on a plate and split it into 2. Add the falafels and break them apart.
  • Add tomato, radish and parsley and pour some Teta Foods Tahini Dressing over them, generously.
  • To serve, roll the pita pieces tightly and cut in half.
