But What is Falafel & Where Does it Come From?

Probably the first dish that springs to mind when thinking of Mediterranean cuisine is falafel. Fava beans, ground chickpeas, or a combination of the two, are used to make falafel, which is usually served as deep-fried patties or balls. While some people enjoy their falafel on its own as a satisfying snack, others like it with salad, pita, and healthy tahini sauce.

Ingredients Needed:

  • Dried chickpeas, soaked overnight (yields two cups) – 1 cup
  • Red onion – ½, chopped 
  • Garlic cloves – 5, chopped
  • Parsley (half bunch) – ¾ cup, chopped
  • Cilantro (half bunch) – ¾ cup, chopped
  • Teta Foods Tahini Dressing & Dip – add as per preference
  • Baking soda – ⅛  tsp
  • Spice mix – 1 ½  tbsp
  • Vegetable oil – 6 cups (fill the pot ¾ full) 

Preparation/Method

  • Add the chickpeas, chopped garlic and onion, parsley, cilantro, baking soda, spice blend, and salt to a food processor. 
  • Pulse until the mixture is combined and the chickpeas are pea-size, stopping and stirring halfway through. Form the falafel mixture into balls about the size of a large marble, firmly packed, and put aside.
  • Fry the falafel: Fill a deep pan halfway with oil, then place it over medium heat.
  • Make sure the saucepan isn’t packed, too full of falafel before dropping the falafel balls into the boiling oil one at a time.
  • Cook for one to two minutes, or until the falafel is golden brown and most of the bubbles have vanished.
  • To serve, arrange the falafel balls onto a serving dish, pour some Teta Foods Tahini Dressing over them, and top with a lemon wedge and parsley.
